It is dawn and the sun has just broken over the top of a dormant volcano.

Smoke from the village kitchen fires starts to rise. The smell of burnt wood in the valley is like an exotic perfume.

Fishermen pull in their nets on the black sands of the nearby Pacific Coast beach.

The village women return from the open-air market with the freshest selection of locally-grown produce, fish, and poultry. Sounds of a finely-tuned orchestra resonate from the kitchens as cooking preparations begin for the day.

Traditional food will be made to feed farm workers,

coffee laborers and ranch hands,

villagers, and the occasional foreign traveler who is lucky enough to stumble into the quaint, secluded village. This may sound like an adventure into the past, but it is still an essential and everyday part of today’s life in El Salvador.

We use the same fresh ingredients, the same tools (sort of), the same preparation, the same quality, and the same exquisite smells and flavors as the villages back in El Salvador. Following the traditions of her Mayan ancestors, Chef Sylvia personally prepares every dish to the highest standards of quality and taste.
